Missed baking, so i found some time to make Vanilla buttercream cupcakes form scratch..
Had to use whatever i found in my kitchen..
1/2 cup unsalted butter, room temperature
2/3 cup granulated white sugar
3 large eggs
Zest of 1 large lemon (outer yellow skin)
1 1/2 cups all purpose flour
1/4 teaspoon salt
1/4 cup milk
~Buttercream Frosting~
2 cups confectioners sugar (icing or powdered sugar), sifted
1/2 cup unsalted butter, room temperature
1 teaspoon pure vanilla extract
Assorted food colors (if desired)
Unfortunately the buttercream didn't turn out like it should have..
I used all the right amount of ingredients but it turned out to runny instead of fluffy..
I'm thinking it turned out wrong because i used salted butter instead of unsalted butter.. could that be the reason?
But now i gotta get back to baking more often.. losing the touch!
All that matters is that it was simple to make and tasted delicious!
